Ingredients:

  • 8 oz spaghetti (or your preferred pasta)
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp GrandpaKong Roasted Shrimp Salt (or to taste)
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth (or white wine for extra flavor)
  • 1 tbsp lemon juice
  • Fresh parsley for garnish
  • Grated Parmesan cheese (optional)

Directions:

  1. Cook the pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the shrimp to the skillet and season with GrandpaKong Roasted Shrimp Salt, red pepper flakes (if using), and black pepper. Cook for 2-3 minutes on each side until the shrimp are pink and cooked through. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil and minced garlic. Cook for 1-2 minutes, being careful not to burn the garlic.
  5. Pour in the chicken broth (or white wine) and lemon juice, scraping the bottom of the pan to release any browned bits.
  6. Add the cooked pasta to the skillet, tossing to coat in the garlic and broth mixture. If needed, add the reserved pasta water to help the sauce coat the pasta.
  7. Return the shrimp to the skillet and toss everything together. Cook for an additional 1-2 minutes to heat through.
  8. Serve the pasta garnished with fresh parsley and a sprinkle of grated Parmesan cheese, if desired.
